Octopus with two Mexican red and green marinades (tallas) salad, pineapple, jimama, cucumber, red onion, lime and habanero, baby arugula and balsamic vinaigrette. Cilantro shoots and edible flowers. Served with totopos.

Cheese and mahogany on brioche bread with Peruvian-inspired huacatay and pisco gravlax. Fennel, green onion, edamame, choclo, cucumber, jalapeño vinaigrette and poblano chutney, coriander shoots.

Pancakes stuffed with a sauted mix of northern shrimps, tomatoes, onions, chili, corn and coriander, bathed in a yellow mole, cheese costra, grilled corn and pumpkin seeds.
