Translating flavors, creating memories

In Piel Canela’s kitchen, the steam smells of Canadian corn and fresh summer peppers. Karla watches them like someone listening to a familiar song in another language. “Cooking outside of Mexico is like translating memories,” she says, stirring a yellow mole sauce that originated in Oaxaca but has grown up in Montreal with fresh local summer peppers.
